今天印象最深刻的就是這道"老奶奶兔肉"
一直以為自己看錯,但真的沒錯,使用的是"嘉義兔肉產銷班"的兔肉,取腿部以低溫烹調方式,佐以醋漬蔬菜,娶台灣紅蘿蔔、紅甜椒、四季豆...等,再以番茄湯底加上熟成三年的巴沙米哥醋小火慢煮,讓不同的蔬菜展現不同的層次

這道菜是來自主廚的童年記憶,過去義大利人經常將自家菜園中當季蔬菜熬煮醃漬放進罐子裡,即使不是產季也能吃到季節的美味,做菜時再將醃漬菜取出搭配季節時蔬或是肉品,使用兔肉則是義大利人喜歡吃的野味

使用的是義大利長米,一般義大利米都會帶米心,『L’origine by La Credenza』燉飯的軟硬度是沙拉可以接受的,也接受客製化,想吃軟或道地的義式燉飯都自行決定喔

這一道實在是太美妙了
人家是牛排搭配鵝肝,我們吃的是牛排搭配雞肝,主廚Igor將羅西尼牛排注入台灣味,使用的是桂丁雞肝

雞肝煎至外皮為焦,內部保有軟嫩的口感,而且也沒有惱人的腥味

牛排低溫烹調數小時後再佐以帶點辛香味薑味櫻桃醬,一旁撒上美麗的綠色、紅色的粉末是主廚指定獨家生產的義大利進口黑醋栗粉、波菜粉,平衡了雞肝的濃厚口味

一旁那一壺不是茶喔,是用濾壓壺盛裝熬煮的蝦湯
概念是來自於濾壓壺是喜歡喝咖啡的義大利人的日常,就像台灣人習慣拿他來泡茶一樣,現在拿來裝湯品是不是超特別
